Cooking Tips

Steaks continue to cook after they are removed from heat.

It is best to remove them 5 degrees F before the desired doneness. The meat will continue to cook in the time it takes to serve.

When preparing roasts, preheat the oven at least 30 minutes prior to cooking.
Roasts will continue to cook after removal from heat.

It is best to pull a roast out 10 degrees F before its desired doneness.

Let the roast sit loosely covered in foil in a warm area for 10-20 minutes. This allows the meat to rest, juices to redistribute evenly, and the temperature to continue to rise to the desired doneness.

Do not overcook your Steaks and Roasts!

Handling instruction for Wagyu Beef

Tips for Getting the most out of your purchase.

From shipping box to your table:

1. Defrost the steaks in the refrigerator

2. Remove from cryovac bag

3. Allow steak to reach room temperature before cooking - 20 minutes (Use a meat thermometer to make sure that the internal temperature is approximately 70 degrees.)

4. DO NOT take steak directly from refrigerator and begin cooking!

5. Season with sea salt and fresh ground pepper

6. Place on hot grill and make grill "marks"

7. After grilling marks, place steak on upper rack and turn 3 or 4 times during grilling process - 5 minutes for each side

8. With meat thermometer take internal temperature of steak to 130 degree or medium rare

9. Remove from grill and allow the steak to "rest" for 5 to 7 minutes

10. Slice, Serve, Eat and Enjoy!!!
